Recipe: Spiced Chickpea Tacos with PACHA Goddess Sauce

PACHA Goddess Sauce

  • ½ cup (70g) roasted cashews (or pistachios or walnuts)

  • 2½ cups loosely packed cilantro leaves and tender stems

  • 6 whole garlic cloves

  • 2 small cans green chiles

  • 1 medium lemon or 1 large lime, zested and juiced

  • ¼ tsp kosher salt, plus more to taste

  • ⅓ cup extra virgin olive oil

Instructions

1. Roast the chickpeas

Preheat the oven to 400°F (200°C).

Toss the chickpeas with olive oil, salt, chili powder, and garlic powder. Spread onto a baking sheet and roast for 20–25 minutes, until golden and lightly crisp. Finish with a squeeze of fresh lime juice.
