The almonds get a quick 60-second blanch so their skins slip off, and that's the only cooking the sauce needs — after that, everything blends together raw: sweet cherry tomatoes, blanched almonds, basil, and cheese, all whirred together while the pasta water comes up to a boil — and it comes together faster than the toast does. It's a Sicilian-inspired take on a raw, no-cook pesto, made without garlic. It's the kind of dinner that looks like it took more effort than it did, which is really the whole point of a good weeknight recipe.

Worth making this one while both are in season, though it holds up fine with good-quality tomatoes any time of year.

Ingredients

For the pasta and sauce

6 oz Bionaturae Organic Fusilli Pasta (Gluten Free) — about half a 12 oz box

⅓ cup raw almonds, whole

1 cup cherry tomatoes, whole

⅓ cup parmesan cheese, cubed

¼ cup fresh basil leaves, loosely packed, plus a few extra for garnish

2–3 tablespoons olive oil

Salt, for the pasta water


For the toast

4 slices of PACHA’s Buckwheat Sourdough Bread Loaf, Original

1–2 tablespoons Churn’s Four Herb Butter


To finish

Extra parmesan cheese, grated, for topping


Serves 2.

Instructions

 1. Bring a small pot of water to a boil.

Add the almonds and blanch for about 60 seconds — just long enough to loosen the skins. Drain and run under cool water until comfortable to handle, then peel by squeezing each almond between your fingers; the skin should slip right off.

2. Add the peeled almonds, whole cherry tomatoes, cubed cheese, basil leaves, and olive oil to a blender. 

Blend until smooth and mostly uniform — a little texture from the almonds is fine, it doesn't need to be silky.

3. Bring a separate pot of well-salted water to a boil. 

Add the Bionaturae fusilli and cook according to package time, or until al dente. Before draining, scoop out about ½ cup of the pasta water and set aside in case the sauce needs thinning. Drain the pasta.

4. While the pasta cooks, melt the Churn Four Herb Butter in a skillet over medium heat until it stops foaming and turns a light golden-brown with a nutty smell.

At about 2–3 minutes, watch closely so it doesn't go past golden into burnt. Add the PACHA bread slices and pan-fry for about 2–3 minutes per side, until deeply golden and crisp at the edges. Remove and set aside.

5. Add the drained pasta back to its pot (or a large bowl) and pour the blended almond-tomato sauce over it.

Toss until every piece is evenly coated, adding a splash of the reserved pasta water if the sauce needs thinning.

6. Divide the pasta between two plates.

Garnish with a few fresh basil leaves and a generous grating of hard cheese. Serve immediately with the herb-buttered PACHA toast alongside for scooping up extra sauce.
