Allergen-Friendly Bread
On top of having a wholesome ingredient list, we’re proud to be free of the top 9 food allergens here at PACHA. We believe everyone should be given the opportunity to enjoy bread, regardless of food sensitivities and allergies. Because of this, we have strict guidelines for allergy-friendly facility— at our Southern California bakery, we do not store, share equipment with, or use ANY of the following food allergens:

In case you’re wondering how PACHA is grain-free or gluten-free with sprouted buckwheat as our main ingredient, it’s because buckwheat is actually classified as a seed! Despite its misleading name, buckwheat is entirely grain-free and gluten-free. In fact, we’re certified gluten-free by the GFCO, and have all ingredients tested to ensure there are no cross contamination nor residual gluten before being sent to our bakery. Before we send our finished products out, we also test once again, to guarantee that there are absolutely no traces of gluten. Here at PACHA, safety is a top priority, and you can rest assured that our bread is safe for your consumption, even if you have a gluten intolerance! However, if you have a condition in which you are unsure if you can safely consume buckwheat, we always recommend seeking the opinion of a health professional before eating PACHA.
Sprouting Process & Nutritional Index
Another commonly-asked question we get is, "how can you make bread with just buckwheat and spices?"— the answer is very simple! We soak our buckwheat in reverse osmosis water until it starts to sprout, and then we ferment and blend the mixture with the organic herbs and spices we mentioned in the ingredient list above. Unlike other breads, our bread does not start with a dough, as we don't use any yeast or flour. Instead, our sprouted and blended buckwheat mixture is more of a thick liquid before it is baked. The magic happens when this mixture rises and forms into hearty bread in the oven; we may be biased, but we truly believe you wouldn't even be able to tell that our bread is made from just 2-5 ingredients because it tastes THAT good!
